Raw Caramel Slices – better than snickers

There is this huuuge hipe about the snickers made raw, sugarfree, healthy, oil-free, palm-oil-free, etc. That’s all not very difficult for me and I am sure they taste amazing. But by the fact, that peanut is so impressive in its taste I wanted to make something different. And that’s how my raw caramel slices were created at noon on a Friday night during the quarantine.

The ingredients for the crust:

  • 2 Tbsp Cashew butter
  • 2 Tbsp coconut flour
  • 2 tbsp ground almonds
  • 1 Tbsp Vanilla Protein Powder from nupro if it’s not from nupro better use a nonflavoured one as most others are very strong in their taste
  • 3 pitted dates
  • 1/2 cup water
  • a pinch of salt

The ingredients for the caramel:

  • 7 pitted dates
  • 1 Tbsp tahini
  • 3/4 cup water
  • a pinch of sea salt

What else:

  • 40 g raw, vegan dark chocolate for topping

First place the seven pitted dates in the lukewarm water and set aside. Than mix all the ingredients for the crust together with a blender and press it in a small cake sheet. Blend the now softer dates in their water with a pinch of salt and the tahini until it becomes a creamy caramel sauce and pour over the crust. Last, melt the chocolate in a bowl, which is in another bowl with hot water. Don’t overheat the water and be patient with melting the chocolate as it destroys the chocolate otherwise. Pour the melted chocolate over the caramel and place everything in the freezer overnight or at least 3 hours. Cut in bars and enjoy.
