Easy and quick rainbow bowl it is. This is really just an inspiration you can pimp it with all the veggies you like and change all the ingredients how you have it at home. Actually it is a leftover bowl with all the things in my fridge I needed to get off soon.

What’s inside:
- 100 g raw carrot
- 1 cooked beet root
- 100 g canned peas, actually you should better use the frozen peas as they have much more nutrition and taste much better
- half a romana heart
- beet root lentil hummus (recipe by dips and spreads)
The dressing:
- 1 tsp mustard
- 4 Tbsp Apple Cider Vinegar
- 1 Tbsp Date Syrup
- 1 Tbsp Soy yogurt
- 1 Tbsp peanut flour or if you don’t have that, regular peanut butter
Slice all the ingredients (carrots, beet root, romana heart) in slices or make veggie noodles from it for more fun. Top with the beet root hummus.
Mix all the ingredients for the dressing and mix very well. For over your salad and enjoy.
