My all time favourite cake has ever been cheesecake especially the one my grandma makes. It always tasted so rich, creamy and sweet. That comes from all the sugar and fat unhealthy milk products like cream cheese and cream.
Since I am vegan and focusing on a healthier lifestyle and love making the filling on a base of tofu and other soy products. So this recipe is not only super delicious, creamy and full of taste but also packed with proteins instead of sugar and much lower in fat.

For the crust you need:
- 220 g oat flour
- 100 g vegan butter
- 90 g apple syrup
- 3 tbsp flax seeds
- pinch of salt
just mix all the ingredients withy your hands until it becomes a round ball of dough. Press into a with baking paper lined baking sheet and set aside.
For the filling you need:
- 400 g natural tofu
- 90 g nut butter of choice (I used cashew)
- 1 Cup Apple Syrup
- half a lemon
- juice from another half lemon
- 2 tbsp baking powder
- Vanilla
- 1 Cup almond milk
- 60 g corn starch
- 1 Apple
just blend all the ingredients together in your vitamin etc. until it becomes a thick and creamy pudding cream. Fill it on the crust and bake everything for 40 min on 180 °C.
Let cool down and enjoy!
