All the treats around Christmas time. We can’t go without them. Unfortunately they mostly are full of sugars and bad fats. Especially made with wheat, cane sugar and butter. I mean every meal on this blog is made vegan so automatically it is less worse for you even it is still a cookie or a cake. But also I never use cane sugar as it brings nothing good stuff but all the bad things with it. So this time I tried to make just regular vanilla cookies called „bridal“ in my home dialect. And what can I say, they worked out pretty yummy. Flat members approved.

The only 5 ingredients you need:
- 125 g whole wheat spelt flour
- 100 g organic vegan butter (alsan) (at room temperature)
- 2 Tbsp Vanilla
- ½ Cup Date/Coconut Syrup (I mixed it, you can take what you want)
- 140 g almond flour
Mix all ingredients in a bowl and take your hands to bring it in a dough. Preheat the oven to 175 °C. Run the dough over a slightly with flour sprinkled wood sheet and press it in little cookie clusters you like. Lay them on a baking sheet with baking paper. Bake them for 12 min and let them cool, bevor you move them, because they break easily. Enjoy as much as you want.
