Vegan Healthy Banana Pancakes

Everybody loves pancakes once in a wile, especially on sundays for another breakfast. Not anybody likes to have sugar, eggs, gluten or wheat in their meals. For those and because I am one of them, I created a recipe without all this stuff..

I substitute the eggs with the banana and the regular wheat flour with buckwheat (has nothing to do with wheat) or oat flour. A great side effect to the banana is, that the pancakes are already sweetened. If you prefer a even sweeter breakfast, add some maple syrup, it’s much more healthy than the cheap refined sugar!

Ingredients and amount:

(1 Serving)

Pancakes:

  • 1/2 banana
  • 100 g buckwheat or oat flour
  • 1 tsp baking powder
  • 1 tbsp maple syrup, if you want it sweeter
  • almond milk until its a creamy texture (about 1/2 cup)
  • coconut oil for the pan

Chocolate sauce:

  • 1 tbsp raw cacao powder
  • 1/2 tbsp maple syrup
  • 1 tbsp melted coconut oil

Mix the flour and the baking powder together. 

Mix the banana with maple syrup and some milk together.

Mix all together and add more milk until the dough is liquid enough to put in the pan but not too liquid, so it stays in pancake size.

Bake on each side for about 2-3 minutes untill its golden brown.

Mix all the sauce ingredients together and stir well until it’s a creamy texture.

Serve the pancakes with more bananas and the chocolate sauce.
