I just came back from the U.S. California and haven’t had a raw vegan selfmade treat in a while, so I decided to make myself something I already know and love, but also with something new inside. A smoothy sweet heart out of raw vegan caramel.
I also really felt like blueberries and of course bananas, because bananas are all we need … And since the blueberries are so damn good in America they had to be in this cake. And there are some more good reasons to put some blueberries in your cake or anything. The Antioxidantions will make your skin look more beautiful and help your body to pretect itself.
Furthermore I missed Chiaseeds which is really sad because they are so good for you and especially as an plant-based eater you really should make them part of your diet. Chiaseeds contain lots of healthy fats, f.e. Omega 3 and 6. Also a lot of protein and vitamins.
Anyhow, this cake turned out much better than I had excepted and is also absolutely good for you and your body! It will keep you satisfied for hours and satisfies your sweet tooth.
Recipe:
Crust:
- 0.5 cup buckwheat groats
- 1 cup walnuts
- 100 g soft dried dates
- 1 tbsp coconut oil
- 0.5 cup shredded coconut
Bananacream:
- 2 ripe bananas
- 1 cup in water soaked cashews
- 0.5 cup maple syrup
- 0.5 cup coconut flour
- 3 tbsp soaked chiaseeds
- 4 soft dates
Tahinicaramel:
- 0.5 cup and 2 tbsp tahini
- 0.5 cup or little less maple syrup
- 1 tbsp coconut oil
Blueberrycream:
- 1 cup frozen or fresh blueberries
- 1 cup in water soaked cashewnuts
- 0.5 cup maple syrup
- 3 tbsp soaked chiaseeds
- 4 soft dates
- 1 tbsp coconut oil
At first soak the cashews for 2 hours in warm water and the Chiaseeds also for about an hour.
Blend all the ingredients for the crust and press into a medium-sized bakingdish – put in freezer.
Blend all the ingredients for the bananacream until it’s really smooth and fill into the crust – put in freezer again.
Now blend all the ingredients for the caramel and top it on the bananacream.
At least, blend all the Blueberrycream ingredients until they are really smooth and make the cake complete.
Leave in the freezer for at least to hours to make it easier to cut.
Before eating, wait ten minutes after you take the cake out of the freezer.
